Ingredients

  • 340 grams Pasta (rotini or fusilli)

  • 0.75 cups Kalamata olives, pitted and sliced

  • 3 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain the pasta and rinse under cold water to stop the cooking process. Let it cool completely.
