Ingredients

  • 6 pieces Fresh figs
  • 4 pieces Flour tortillas
  • 6 ounces Goat cheese
  • 2 tablespoons Honey
  • 1 teaspoon Fresh thyme leaves
  • 2 teaspoons Olive oil
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Wash the fresh figs, remove the stems, and slice them into thin rounds.

Step 2

In a small bowl, mix the goat cheese with the fresh thyme leaves, salt, and black pepper until well combined.

Step 3

Lay two tortillas flat on a clean surface. Spread half of the goat cheese mixture evenly over each tortilla.

Step 4

Arrange the sliced figs evenly over the goat cheese layer on both tortillas. Drizzle 1 tablespoon of honey over the figs on each tortilla.

Step 5

Place the remaining tortillas on top to form two quesadillas, pressing gently to seal them.

Step 6

Heat 1 teaspoon of olive oil in a large non-stick skillet over medium heat. Once hot, place one quesadilla in the skillet and cook for 2-3 minutes, or until the bottom is golden brown and crispy.

Step 7

Flip the quesadilla carefully using a spatula and cook the other side for another 2-3 minutes. Remove from the skillet and repeat the process with the second quesadilla, adding the additional teaspoon of olive oil if needed.

Step 8

Once both quesadillas are cooked, transfer them to a cutting board and let them cool for 1-2 minutes. Cut each quesadilla into quarters.

Step 9

Serve warm, optionally garnished with additional fresh thyme or a light drizzle of honey.
