Crisp, refreshing, and bursting with vibrant flavors, this Fresh Dill Cucumber Salad is the perfect summertime side dish or light appetizer. Made with cool, thinly sliced English cucumbers, aromatic fresh dill, and tangy red onion, this salad gets an extra kick from a simple yet flavorful white wine vinegar and olive oil dressing. A touch of minced garlic adds depth, while optional crumbled feta cheese brings a creamy, salty finish. Ready in just 20 minutes with no cooking required, this effortless recipe is a go-to for picnics, barbecues, or busy weeknight meals. Serve it chilled to let the bold yet delicate flavors truly shine.
Wash and dry the cucumbers. Using a sharp knife or a mandoline, slice the cucumbers into thin, even slices, about 1/8-inch thick. Place the slices in a large salad bowl.
Take the fresh dill and finely chop it to measure about 1/2 cup. Add the chopped dill to the cucumbers in the bowl.
Peel the red onion and slice it thinly into half-moon shapes. Add the onion slices to the salad bowl with the cucumber and dill.
Peel and mince the garlic clove. Add the minced garlic to the salad bowl.
In a small mixing bowl, combine white wine vinegar, olive oil, salt, and freshly ground black pepper. Whisk until the dressing is well-combined.
Pour the dressing over the cucumber, dill, and onion mixture. Toss everything together gently but thoroughly until all the ingredients are well coated with the dressing.
If using, crumble the feta cheese and sprinkle it over the top of the salad.
Let the salad sit for at least 10 minutes before serving to allow the flavors to meld together. Serve chilled or at room temperature.
