Ingredients

  • 10 large Fresh tomatoes (Roma or plum recommended)
  • 1 medium Yellow onion
  • 4 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 cup Fresh basil leaves
  • 2 tablespoons Fresh oregano
  • 2 tablespoons Tomato paste
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Start by prepping the fresh tomatoes. Bring a large pot of water to boil, score an 'X' on the bottom of each tomato, and blanch them in the boiling water for 30 seconds. Immediately transfer the tomatoes to an ice water bath. Peel off the skins and roughly chop. Set aside.

Step 2

Dice the yellow onion and mince the garlic cloves.

In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes, until translucent. Add the minced garlic and cook for another 1-2 minutes, until fragrant. Remove from heat.

In the crock pot, combine the peeled and chopped tomatoes, sautéed onion and garlic, fresh basil leaves, fresh oregano, tomato paste, sugar, salt, ground black pepper, and red pepper flakes (if using). Stir well to combine.
