Ingredients

  • 2 cups fresh corn kernels
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 small red onion
  • 0.5 cups apple cider vinegar
  • 0.25 cups granulated sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon ground mustard
  • 0.5 teaspoon celery seeds
  • 1 small jalapeño (optional, for heat)

Directions

Step 1

Shuck the corn and remove the kernels from the cob using a sharp knife. Measure out 2 cups of fresh kernels and set aside.

Step 2

Dice the red bell pepper, green bell pepper, and red onion into small, uniform pieces. If using the jalapeño, remove the seeds and finely chop it as well.

Step 3

In a medium saucepan over medium heat, combine the apple cider vinegar, granulated sugar, salt, black pepper, ground mustard, and celery seeds. Stir until the sugar dissolves completely.

Step 4

Add the prepared corn kernels, diced peppers, onion, and jalapeño (if using) to the saucepan. Stir well to coat the vegetables in the vinegar mixture.

Step 5

Bring the mixture to a gentle simmer and cook for 5-7 minutes, stirring occasionally, until the vegetables are tender yet still crisp and the liquid has slightly reduced.

Step 6

Remove the saucepan from the heat and let the corn relish cool to room temperature.

Step 7

Transfer the mixture to a clean, airtight container and refrigerate for at least 2 hours to allow the flavors to meld together.

Step 8

Serve the Fresh Corn Relish chilled or at room temperature as a topping or side dish. It pairs well with tacos, grilled meats, burgers, or even as a dip for chips.
