Ingredients

  • 5 cups Fresh cherries (pitted)
  • 1 cup Granulated sugar
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoons Salt
  • 6 tablespoons Unsalted butter (cold)
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9-inch square or round baking dish.

Step 2

In a large mixing bowl, combine the pitted cherries, 3/4 cup of the granulated sugar, cornstarch, and lemon juice. Stir until the cherries are evenly coated and set aside to macerate while preparing the topping.

Step 3

In another mixing bowl, whisk together the flour, baking powder, remaining 1/4 cup of sugar, and salt.

Step 4

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Step 5

Gradually pour in the milk and vanilla extract, stirring just until a sticky dough forms. Be careful not to overmix.

Step 6

Transfer the cherry mixture into the prepared baking dish, spreading it evenly across the bottom.

Step 7

Drop spoonfuls of the dough over the cherries, allowing some of the cherries to peek through for a rustic look.

Step 8

Place the cobbler in the preheated oven and bake for 35–40 minutes, or until the topping is golden brown and the cherry mixture is bubbling.

Step 9

Remove the cobbler from the oven and let it cool for 10 minutes. Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
