Ingredients

  • 2 cups Fresh mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 0.5 cups Granulated sugar
  • 0.25 cups Water
  • 1 tablespoon Freshly squeezed lemon juice
  • 0.5 teaspoons Vanilla extract (optional)

Directions

Step 1

Rinse the berries thoroughly under cold water and pat them dry with a clean kitchen towel.

Step 2

If using strawberries, hull them and slice them into smaller pieces.

Step 3

In a medium saucepan, combine the berries, granulated sugar, and water.

Step 4

Place the saucepan over medium heat, stirring frequently, until the sugar dissolves and the berries start to release their juices. This should take about 3-5 minutes.

Step 5

Lower the heat to medium-low and let the mixture simmer for 10 minutes, stirring occasionally. The berries will break down and thicken into a syrup.

Step 6

Remove the saucepan from the heat and stir in the lemon juice and vanilla extract (if using).

Step 7

Let the syrup cool slightly, then strain it through a fine mesh sieve into a bowl or jar if you prefer a smooth texture. Use the back of a spoon to press the berries and extract as much liquid as possible.

Step 8

If you prefer a chunkier syrup, skip the straining step and leave the softened berries in the syrup.

Step 9

Allow the syrup to cool completely before transferring it to an airtight container. Store in the refrigerator for up to one week.

Step 10

Serve the fresh berry syrup over pancakes, waffles, yogurt, ice cream, or your favorite desserts.
