Ingredients

  • 2 tablespoons olive oil
  • 2 large yellow onion
  • 3 garlic cloves
  • 1.5 pounds baby potatoes
  • 12 ounces smoked sausage
  • 1 teaspoon dried thyme
  • 1 tablespoon Dijon mustard
  • 1 cup chicken stock
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large skillet or cast-iron pan over medium heat.

Step 2

Slice the yellow onions into thin rings and mince the garlic cloves. Add the onions to the pan and sauté for about 10 minutes, stirring occasionally, until golden and caramelized.

Step 3

While the onions cook, wash and halve the baby potatoes. Slice the smoked sausage into 1/2-inch rounds.

Step 4

Once the onions are caramelized, add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 5

Push the onions to one side of the pan and add the halved baby potatoes, cut side down. Let the potatoes sear for 3-4 minutes without stirring.

Step 6

Add the sausage slices to the pan. Sprinkle the dried thyme over the pan, stirring everything together.

Step 7

In a small bowl, whisk together the chicken stock and Dijon mustard. Pour the mixture into the pan and stir gently to coat the ingredients.

Step 8

Season with salt and black pepper, then reduce the heat to low. Cover the pan with a lid and let simmer for 20-25 minutes, stirring occasionally, until the potatoes are tender and the liquid has reduced slightly.

Step 9

Taste and adjust the seasoning if needed. Sprinkle fresh parsley over the dish before serving.

Step 10

Serve warm with crusty bread on the side to complete the meal.
