  • 100 g Granulated sugar
  • 25 g Cornstarch
  • 4 pieces Large egg yolks
  • 50 g Unsalted butter
  • 1 bean or tsp Vanilla bean (split and seeds scraped) or vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

In a medium saucepan, heat the milk over medium heat until it begins to steam, but do not let it boil. If using a vanilla bean, add the bean and seeds to the milk as it heats. Remove from heat and let steep to infuse the flavor, if desired.

In a medium mixing bowl, whisk together the sugar, cornstarch, and salt. Add the egg yolks and whisk until the mixture is smooth and pale.

Gradually pour the hot milk into the egg mixture in a slow, steady stream, whisking constantly to temper the eggs.
