Ingredients

  • 4 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 4 large Yellow onions, thinly sliced
  • 1 teaspoon Granulated sugar
  • 2 cloves Garlic, minced
  • 2 cups Beef stock
  • 1 cup Dry white wine
  • 2 sprigs Thyme, fresh
  • 1.5 cups Gruyere cheese, shredded
  • 24 pieces Wonton wrappers
  • 1 large Egg, beaten
  • 4 cups Vegetable oil, for frying
  • 1 tablespoon Chives, finely chopped (optional, for garnish)

Directions

Step 1

In a large skillet or Dutch oven, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat.

Step 2

Add the sliced onions and cook, stirring often, until they are golden and caramelized, about 30–35 minutes. Sprinkle with sugar midway through to enhance caramelization.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Deglaze the skillet with the white wine, scraping up any browned bits from the bottom.

Step 5

Add the beef stock and thyme sprigs, then simmer for 20 minutes. Remove the thyme sprigs and continue to reduce the mixture until it thickens and resembles a jam-like consistency. Set aside to cool.

Step 6

Once the onion mixture has cooled, mix in 1 cup of shredded Gruyere cheese.

Step 7

Lay out wonton wrappers on a clean work surface. Spoon a small amount (about 1 tablespoon) of the onion-cheese mixture into the center of each wrapper.

Step 8

Brush the edges of each wonton with beaten egg, then fold and seal tightly, making sure there are no air pockets. Pinch and pleat gently for extra security.

Step 9

In a large pot, heat vegetable oil to 350°F (175°C). Fry the dumplings in small batches for 2–3 minutes, or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Step 10

Preheat your broiler to high. Place the fried dumplings on a baking sheet, sprinkle with the remaining 0.5 cups of shredded Gruyere, and broil for 1–2 minutes until the cheese is melted and bubbly.

Step 11

Garnish with chopped chives if desired and serve immediately.
