Ingredients

  • 4 pieces bone-in pork chops
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 0.5 cup dry white wine (optional)
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1 cup grated Gruyère cheese (optional)

Directions

Step 1

Season the pork chops on both sides with salt and pepper. Lightly dredge each pork chop in flour, shaking off any excess.

Step 2

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the pork chops for 3-4 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.

Step 3

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Add the sliced onions and a pinch of salt. Cook for 15-20 minutes, stirring occasionally, until the onions are deeply caramelized. You can add the teaspoon of sugar halfway through cooking to enhance the caramelization.

Step 4

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

Step 5

Pour in the beef broth and white wine (if using), scraping the bottom of the skillet to deglaze and release any browned bits. Stir in the thyme leaves.

Step 6

Return the pork chops to the skillet, nestling them into the onion mixture. Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the pork chops are cooked through (internal temperature of 145°F/63°C).

Step 7

If desired, sprinkle the Gruyère cheese on top of the pork chops during the last 5 minutes of cooking and cover to melt the cheese.

Step 8

Garnish with chopped parsley before serving. Serve hot, optionally with crusty bread, mashed potatoes, or a green vegetable on the side.
