  • 4 pieces bone-in pork chops
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 3 large, thinly sliced yellow onions
  • 3 cloves, minced garlic
  • 2 cups beef broth
  • 0.5 cups dry white wine (optional)
  • 6 sprigs fresh thyme
  • 1 tablespoon worcestershire sauce
  • 1 tablespoon all-purpose flour
  • 0.5 cups shredded Gruyère cheese
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper

Directions

Step 1

Season both sides of the pork chops with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Step 3

Sear the pork chops for about 2-3 minutes per side until golden brown. Remove from skillet and set aside.

Step 4

Reduce heat to medium, then add the remaining 2 tablespoons of butter and 1 tablespoon of olive oil to the skillet.

Add the thinly sliced onions and cook, stirring occasionally, for about 20 minutes, or until deeply caramelized and golden brown.
