  • 500 ml Whole milk
  • 4 pieces Egg yolks
  • 150 g Granulated sugar
  • 30 g Cornstarch
  • 1 tsp Pure vanilla extract
  • 400 g Soft sponge cake (store-bought or homemade)
  • 250 ml Heavy cream
  • 20 g Powdered sugar
  • 50 ml Water
  • 100 g Caramelized sugar (for topping)

Directions

Step 1

1. Start with making the custard: In a medium saucepan, heat the milk over medium heat until it begins to steam but does not boil.

2. In a separate bowl, whisk together egg yolks, granulated sugar, and cornstarch until smooth and pale in color.

3. Gradually whisk a ladle of the hot milk into the egg yolk mixture to temper the eggs, then slowly pour the egg mixture back into the saucepan of milk, whisking constantly.

4. Continue to cook the custard over medium heat, stirring frequently, until it thickens and coats the back of a spoon. Remove from heat and stir in the vanilla extract. Let cool to room temperature.
