Ingredients

  • 3 pounds Beef chuck roast
  • 4 cups Beef broth
  • 0.5 cups Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 4 cloves Garlic cloves (minced)
  • 1 medium Onion (sliced)
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 0.5 teaspoons Black pepper
  • 6 pieces Sub rolls
  • 6 slices Provolone cheese slices

Directions

Step 1

Trim any excess fat from the beef chuck roast and place it in the bottom of a large crock pot.

Step 2

In a medium-sized mixing bowl, combine the beef broth, soy sauce, Worcestershire sauce, minced garlic, sliced onion, dried thyme, dried rosemary, and black pepper. Stir until well mixed.

Step 3

Pour the mixture over the beef in the crock pot, ensuring it is fully covered by the liquid.

Step 4

Cover the crock pot with the lid and cook on low for 8 hours, or until the beef is tender and easily pulls apart with a fork.

Step 5

Once cooked, carefully remove the beef from the crock pot and shred it using two forks. Set the shredded beef aside.

Step 6

Strain the cooking liquid through a fine mesh sieve into a bowl or measuring cup to make a clear au jus sauce. Discard the solids.

Step 7

Preheat your oven to 350°F (175°C).

Step 8

Slice the sub rolls in half, and layer each with shredded beef and a provolone cheese slice. Place the sandwiches on a baking sheet.

Step 9

Bake the sandwiches in the oven for 5-7 minutes, or until the cheese is melted and the rolls are slightly toasted.

Step 10

Serve the sandwiches warm with a small bowl of the strained au jus sauce on the side for dipping.
