Ingredients

  • 3 pounds Boneless beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, sliced
  • 4 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Soy sauce
  • 2 sprigs Fresh thyme
  • 1 Bay leaf
  • 6 French rolls
  • 6 slices Provolone cheese, optional

Directions

Step 1

Preheat a large skillet or Dutch oven over medium-high heat.

Step 2

Season the beef chuck roast on all sides with salt, pepper, garlic powder, and onion powder.

Step 3

Heat the olive oil in the pan and sear the beef chuck roast on all sides until browned, about 4 minutes per side. Remove the beef and set aside.

Step 4

In the same pan, add the sliced onion and sauté for 3-4 minutes until softened.

Step 5

Pour in the beef broth, Worcestershire sauce, and soy sauce, scraping the bottom of the pan to deglaze it and release any browned bits.

Step 6

Add the thyme sprigs and bay leaf to the liquid, then return the beef chuck roast to the pot.

Step 7

Reduce the heat to low, cover the pot, and simmer for 4 hours, turning the meat occasionally, until the beef is tender and easily shredded.

Step 8

Remove the beef from the pot and shred it using two forks. Set aside.

Step 9

Strain the cooking liquid into a bowl to remove herbs and onion pieces, reserving the liquid as the au jus for dipping.

Step 10

Preheat the oven to 375°F (190°C).

Step 11

Slice the French rolls in half and place them on a baking sheet.

Step 12

Optional: Layer each roll with shredded beef and top with a slice of provolone cheese. Bake for 5-7 minutes or until the cheese is melted and the bread is slightly toasted.

Step 13

Serve the sandwiches warm with a small bowl of au jus on the side for dipping.
