Ingredients

  • 2 tablespoons unsalted butter
  • 1 large yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 0.5 teaspoons dried thyme
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground black pepper
  • 4 hoagie rolls, split
  • 4 slices sliced provolone cheese
  • 1 pound deli-sliced roast beef

Directions

Step 1

Heat a large skillet or saucepan over medium heat and melt the butter.

Step 2

Add the sliced onion to the skillet and sauté for 5-7 minutes, stirring occasionally, until the onion is soft and golden.

Step 3

Add the minced garlic and sauté for 1 more minute, until fragrant.

Step 4

Pour in the beef broth, Worcestershire sauce, soy sauce, and stir in the dried thyme, salt, and black pepper.

Step 5

Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 10-15 minutes to reduce slightly and enhance the flavors. This will be your Au Jus.

Step 6

While the Au Jus simmers, preheat the oven to 375°F (190°C).

Step 7

Place the hoagie rolls on a baking sheet and lightly toast them in the oven for 3-5 minutes, or until slightly crisp.

Step 8

Divide the roast beef evenly among the toasted hoagie rolls and top each with a slice of provolone cheese.

Step 9

Return the sandwiches to the oven for another 3-5 minutes, or until the cheese is melted.

Step 10

Strain the Au Jus through a fine mesh sieve to remove the onions and other solids, leaving a smooth dipping sauce.

Step 11

Serve the sandwiches warm with a small bowl of Au Jus on the side for dipping.
