Ingredients

  • 2 pounds ground beef
  • 1 large (chopped) yellow onion
  • 1 large (chopped) bell pepper (red or green)
  • 3 minced garlic cloves
  • 28 ounces (canned) diced tomatoes
  • 15 ounces (canned) tomato sauce
  • 15 ounces (canned, drained and rinsed) kidney beans
  • 15 ounces (canned, drained and rinsed) black beans
  • 1 cup beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup (for garnish, optional) shredded cheddar cheese
  • 0.5 cup (for garnish, optional) sour cream
  • 0.25 cup (for garnish, optional) sliced green onions

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the chopped onion and bell pepper to the pot. Cook for 5–7 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Add the ground beef, breaking it up with a wooden spoon. Cook until fully browned and no longer pink, about 10 minutes. Drain excess fat, if necessary.

Step 5

Stir in the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1–2 minutes to bloom the spices.

Step 6

Add the diced tomatoes, tomato sauce, drained kidney beans, black beans, and beef broth to the pot. Stir well to combine.

Step 7

Bring the chili to a simmer, then reduce heat to low. Cover partially with a lid and let it cook for 40–45 minutes, stirring occasionally, to allow the flavors to meld.

Step 8

Taste and adjust seasonings as needed.

Step 9

Serve hot in bowls and garnish with shredded cheddar cheese, sour cream, and sliced green onions, if desired.
