Directions

Step 1

Peel and thinly slice the yellow onions, red onions, and shallots. Clean and thinly slice the leeks (white and light green parts only).

In a large, heavy-bottomed pot, melt the butter and olive oil over medium heat.

Add the sliced yellow onions, red onions, shallots, and leeks to the pot. Stir well to coat them in the butter and oil.
