Ingredients

  • 500 grams Penne pasta
  • 4 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 1 cup Heavy cream
  • 1 cup Mozzarella cheese (shredded)
  • 1 cup Parmesan cheese (grated)
  • 1 cup Cheddar cheese (shredded)
  • 1 cup Gruyère cheese (shredded)
  • 2 cloves Garlic (minced)
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley (chopped, optional for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Remove garlic from the pan and set aside.

Step 3

In the same saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1 minute, stirring constantly to create a roux.

Step 4

Gradually whisk in the milk and heavy cream, continuing to stir to prevent lumps from forming. Bring the mixture to a gentle simmer and cook for 3-4 minutes until slightly thickened.

Step 5

Lower the heat to medium-low and begin adding the cheeses one at a time—mozzarella, Parmesan, cheddar, and Gruyère. Stir continuously until each cheese has melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt and ground black pepper to taste. Stir in the sautéed garlic for added flavor.

Step 7

Add the cooked and drained pasta to the cheese sauce. Toss well to coat the pasta evenly.

Step 8

Serve immediately, garnished with fresh parsley if desired. Enjoy your creamy, cheesy pasta dish!
