Ingredients

  • 1 cup dried fava beans
  • 4 cups water
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 tomato, diced
  • 2 green onions, chopped
  • 0.5 teaspoon paprika
  • 2 hard-boiled eggs, sliced (optional)
  • 4 pieces warm pita bread

Directions

Step 1

Rinse the dried fava beans under cold water to remove any impurities.

Step 2

Place the beans in a large pot and cover with 4 cups of water. Allow them to soak for at least 8 hours or overnight.

Step 3

After soaking, drain the beans and rinse again. Refill the pot with fresh water and bring it to a boil over high heat.

Once boiling, reduce the heat to low, cover the pot, and let the beans simmer for about 45-60 minutes or until they are tender. Check periodically to ensure the water level covers the beans, adding more hot water if necessary.

When the beans are soft, drain any excess water. Add the olive oil, minced garlic, lemon juice, ground cumin, salt, and black pepper to the pot. Stir gently to combine and let it cook for another 5 minutes over low heat.
