Ingredients

  • 4 slices Crusty bread (such as ciabatta or sourdough)
  • 6 ounces Fontina cheese
  • 8 ounces Cremini or button mushrooms
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh thyme, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 2 tablespoons Mayonnaise (optional)

Directions

Step 1

Clean the mushrooms with a damp paper towel to remove any dirt, then slice them thinly.

Step 2

In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat.

Step 3

Add the sliced mushrooms to the skillet and cook, stirring occasionally, until they are golden and have released their moisture, about 6-8 minutes.

Step 4

Add the minced garlic, chopped thyme, salt, and black pepper to the mushrooms. Cook for an additional 1-2 minutes until fragrant, then remove the skillet from heat.

Step 5

Preheat a panini press, grill pan, or skillet over medium heat.

Step 6

Assemble each panini by layering the Fontina cheese, sautéed mushrooms, and another layer of Fontina cheese between two slices of crusty bread. Spread mayonnaise on the outside of the bread slices, if desired, to enhance browning.

Step 7

Melt the remaining 1 tablespoon of butter in the panini press or skillet, or brush it on the outside of the bread for extra golden crust.

Step 8

Press the sandwiches in the panini press or cook them in the skillet, applying gentle pressure with a spatula, until the bread is golden brown and crispy and the cheese has fully melted. This should take about 3-5 minutes per side in a skillet or 5 minutes in a press.

Step 9

Slice the panini in half and serve warm. Enjoy your Fontina Mushroom Panini!
