Ingredients

  • 500 grams all-purpose flour
  • 325 milliliters lukewarm water
  • 80 milliliters extra virgin olive oil
  • 7 grams active dry yeast
  • 1 teaspoon granulated sugar
  • 2 teaspoons fine sea salt
  • 2 medium yellow onions
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon flaky sea salt

Directions

Step 1

In a large mixing bowl, combine the lukewarm water, active dry yeast, and granulated sugar. Stir and let sit for 5-10 minutes, or until the mixture is foamy.

Step 2

Add the all-purpose flour, fine sea salt, and 2 tablespoons of olive oil to the yeast mixture. Stir with a wooden spoon or use a stand mixer with a dough hook attachment until the dough comes together.

Step 3

Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, knead in the stand mixer for 5 minutes on medium speed.

Step 4

Lightly grease a clean bowl with olive oil and place the dough inside. Cover with a kitchen towel and let it rise in a warm spot for 1-2 hours until it doubles in size.

Step 5

While the dough is rising, prepare the caramelized onions. Thinly slice the onions. Heat a large skillet over medium heat and add the butter and 1 tablespoon of olive oil. Once melted, add the sliced onions and reduce the heat to low.

Step 6

Cook the onions over low heat, stirring occasionally, for 25-30 minutes, or until they are golden brown and caramelized. Add the fresh thyme leaves during the last 5 minutes of cooking. Remove from heat and let them cool.

Step 7

Once the dough has risen, preheat your oven to 220°C (425°F). Grease a rectangular sheet pan or baking dish with 2 tablespoons of olive oil.

Step 8

Punch down the dough and transfer it to the prepared pan. Use your fingers to stretch and press the dough evenly into the pan, creating dimples across the surface.

Step 9

Drizzle 2 tablespoons of olive oil over the dough and spread it evenly. Top the dough with the caramelized onions and sprinkle the flaky sea salt over the top.

Step 10

Let the dough rise again for 20-30 minutes, uncovered, while the oven is preheating.

Step 11

Bake the focaccia in the preheated oven for 20-25 minutes, or until the top is golden brown and the bread is cooked through.

Step 12

Remove the focaccia from the oven and let it cool slightly before slicing. Serve warm or at room temperature.
