Ingredients

  • 240 ml Warm water
  • 7 g Active dry yeast
  • 5 g Granulated sugar
  • 385 g All-purpose flour
  • 60 ml Olive oil
  • 7 g Salt
  • 2 tbsp Fresh rosemary (optional for topping)
  • 1 tbsp Flaky sea salt (for topping)

Directions

Step 1

In a large mixing bowl, combine the warm water, active dry yeast, and granulated sugar. Stir gently and let sit for 5-10 minutes until the mixture becomes foamy.

Step 2

Add the all-purpose flour, 30 ml of olive oil, and salt to the yeast mixture. Stir with a wooden spoon until a sticky dough forms.

Step 3

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.

Step 4

Lightly oil a clean mixing bowl and place the dough inside. Cover with a damp towel or plastic wrap, then let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5

Once risen, punch down the dough and divide it into 8 equal portions. Roll each portion into a ball and place them on a baking sheet lined with parchment paper, leaving space between each bun.

Step 6

Using your fingers, press down on each dough ball to flatten them slightly and create the signature dimpled texture of focaccia. Cover and let proof for another 30 minutes.

Preheat your oven to 200°C (400°F).
