  • 2 large Egg whites
  • 0.25 teaspoon Cream of tartar

Step 1

In a small saucepan, combine the granulated sugar and water. Stir gently to dissolve the sugar. Heat over medium heat until the sugar dissolves completely and the mixture begins to simmer.

Use a candy thermometer to monitor the temperature of the syrup. Continue cooking until it reaches 238°F (soft-ball stage). Do not stir while it cooks.

Meanwhile, in the bowl of a stand mixer (or using a hand mixer and a heatproof bowl), beat the egg whites and cream of tartar on medium-high speed until soft peaks form.

Step 4

Once the syrup reaches 238°F, immediately remove it from the heat. With the mixer running on low speed, slowly drizzle the hot syrup into the egg whites, being careful to pour it down the side of the bowl to prevent splattering.

Increase the mixer speed to high and whip the mixture for about 5-7 minutes, or until stiff, glossy peaks form and the frosting has cooled to room temperature.
