Ingredients

  • 4 pieces chicken thighs (bone-in, skin-on)
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 pieces garlic cloves
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 1 piece bay leaf
  • 2 tablespoons fresh parsley

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt, black pepper, and paprika on all sides. Set aside.

Heat 2 tablespoons of olive oil in a large, deep skillet or Dutch oven over medium-high heat.

Add the chicken thighs to the skillet, skin-side down, and sear for 5-7 minutes until the skin is golden and crispy. Flip the chicken and cook for another 3-4 minutes. Remove the chicken and set it aside.
