Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice
  • 1 teaspoon Cornstarch
  • 250 milliliters Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 150 grams Fresh berries (e.g., strawberries, raspberries, blueberries)
  • 10 leaves Mint leaves (optional garnish)

Directions

Step 1

Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.

Step 2

In a clean, dry mixing bowl, add the egg whites. Using an electric mixer, beat on medium speed until soft peaks form.

Step 3

Gradually add the sugar, one tablespoon at a time, while continuing to beat. Increase the mixer speed to high and beat until stiff, glossy peaks form (this should take about 7-10 minutes).

Step 4

Fold in the vanilla extract, lemon juice, and cornstarch gently with a spatula until just combined.

Step 5

Spoon the meringue mixture onto the prepared baking sheet in a large circular shape, creating a shallow well in the center to later hold the whipped cream and berries.

Step 6

Bake the meringue in the preheated oven for 90 minutes. When done, turn off the oven and let the meringue cool completely inside the oven with the door slightly ajar (this prevents cracks).

Step 7

While the meringue cools, prepare the whipped cream. In a chilled mixing bowl, add the heavy whipping cream and powdered sugar. Whip on medium-high speed until soft peaks form. Be careful not to overwhip.

Step 8

Once the meringue has cooled, transfer it to a serving platter. Gently fill the center with the whipped cream.

Step 9

Top the whipped cream with fresh berries, arranging them however you like.

Step 10

For an elegant touch, garnish with mint leaves before serving.
