Ingredients

  • 4 pieces flounder fillets
  • 4 slices thinly sliced deli ham
  • 4 slices Swiss cheese
  • 0.5 cup all-purpose flour
  • 2 large eggs
  • 2 tablespoons milk
  • 1 cup panko breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 pieces lemon wedges
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Lay each flounder fillet flat on a clean work surface. Lightly season both sides with salt and black pepper.

Step 3

Place a slice of ham and a slice of Swiss cheese on the wider end of each fillet.

Step 4

Carefully roll up the fillets, starting from the cheese-and-ham end, and secure each roll with a toothpick to hold its shape.

Step 5

Prepare a breading station. Place the all-purpose flour on a shallow plate. In a small bowl, whisk together the eggs and milk. In another shallow dish, combine the panko breadcrumbs and grated Parmesan cheese.

Step 6

Dredge each flounder roll in flour, shaking off excess. Next, dip it into the egg mixture, and then coat it evenly with the breadcrumb mixture.

Step 7

In a large oven-safe skillet, heat the butter and olive oil over medium heat. Once hot, gently place the breaded fish rolls seam-side down in the skillet.

Step 8

Sear the rolls for 2–3 minutes on each side, or until they are golden brown.

Step 9

Transfer the skillet to the preheated oven and bake for 15–20 minutes, or until the fish is cooked through (the internal temperature should reach 145°F/63°C).

Step 10

Carefully remove the toothpicks from the flounder rolls and serve immediately with lemon wedges on the side.
