Ingredients

  • 1.5 pounds Ground beef
  • 3 cups Fresh spinach
  • 0.75 cups Italian breadcrumbs
  • 0.25 cups Milk
  • 0.5 cups Grated Parmesan cheese
  • 0.5 cups Shredded mozzarella cheese
  • 2 large Eggs
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper
  • 1 tablespoons Olive oil
  • 1 cups Marinara sauce

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan and set it aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the fresh spinach and sauté for 2-3 minutes until wilted. Remove from heat and allow it to cool slightly. Squeeze out any excess liquid and chop finely.

Step 3

In a large mixing bowl, combine the ground beef, Italian breadcrumbs, milk, Parmesan cheese, eggs, minced garlic, parsley, salt, and black pepper.

Step 4

Add the wilted and chopped spinach to the mixture, ensuring all ingredients are evenly incorporated without overmixing.

Step 5

Shape the meat mixture into a loaf on the prepared baking sheet or press it evenly into the loaf pan.

Step 6

Spread half of the marinara sauce evenly over the top of the meatloaf.

Step 7

Bake the meatloaf in the preheated oven for 40-45 minutes, or until the internal temperature reaches 160°F (71°C).

Step 8

Remove the meatloaf from the oven and sprinkle the shredded mozzarella cheese evenly over the top. Return it to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 9

Let the meatloaf rest for 5-10 minutes before slicing and serving.

Step 10

Serve slices with the remaining marinara sauce on the side and garnish with extra Parmesan or parsley if desired.
