Ingredients

  • 4 large ripe tomatoes
  • 4 cups fresh spinach

Directions

Step 1

Wash and dry the tomatoes. Using a sharp knife, slice off the tops of the tomatoes and carefully scoop out the seeds and pulp with a spoon, creating a hollow shell. Be careful not to puncture the walls of the tomatoes. Set the hollowed tomatoes aside.
