Ingredients

  • 2 lbs Beef chuck roast
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp All-purpose flour
  • 3 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 3 large Yellow onions, thinly sliced
  • 12 oz Belgian-style dark beer
  • 1 cup Beef stock
  • 1 tbsp Apple cider vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Dijon mustard
  • 1 tsp Dried thyme
  • 2 Bay leaves
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Pat the beef chuck roast dry with paper towels, then cut it into 2-inch cubes. Season the beef generously with salt and black pepper.

Step 2

Place the beef cubes in a mixing bowl and sprinkle with all-purpose flour, tossing to coat evenly.

Step 3

Heat 1 tablespoon of olive oil and 2 tablespoons of unsalted butter in a large skillet over medium-high heat.

Step 4

Sear the beef cubes in batches, making sure not to overcrowd the skillet. Cook each side until browned, about 3-4 minutes per batch. Set the seared beef aside.

Step 5

In the same skillet, add 1 tablespoon of butter and the sliced onions. Reduce the heat to medium and cook the onions, stirring frequently, until softened and lightly caramelized, about 10 minutes.

Step 6

Transfer the seared beef and caramelized onions to the crock pot.

Step 7

Deglaze the skillet with the Belgian-style dark beer, scraping the bottom of the pan to release the browned bits. Let it simmer for 2 minutes, then pour the beer mixture into the crock pot.

Step 8

Add the beef stock, apple cider vinegar, brown sugar, Dijon mustard, dried thyme, and bay leaves into the crock pot. Stir everything gently to combine.

Step 9

Cover the crock pot with a lid and cook on low heat for 8 hours, or until the beef is tender and the flavors have melded together.

Step 10

Once cooked, taste and adjust the seasoning with additional salt and pepper, if needed. Discard the bay leaves.

Step 11

Garnish with freshly chopped parsley before serving, if desired.

Step 12

Serve the Flemish beef stew hot with crusty bread, mashed potatoes, or egg noodles.
