Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Ground flaxseed
  • 1 teaspoon Baking powder
  • 0.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 1.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 1 cups Pumpkin puree
  • 0.75 cups Brown sugar
  • 0.5 cups Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cups Milk (any type)
  • 0.5 cups Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners or lightly grease with cooking spray.

Step 2

In a large mixing bowl, combine the all-purpose flour, ground flaxseed, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Whisk together until evenly blended.

Step 3

In a separate medium-sized bowl, whisk together the pumpkin puree, brown sugar, vegetable oil, eggs, vanilla extract, and milk until smooth and creamy.

Step 4

Gradually add the wet ingredients into the dry ingredients, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix—it's okay if a few lumps remain.

Step 5

If using, fold in the chopped walnuts or pecans to the batter for added texture and flavor.

Step 6

Evenly distribute the muffin batter into the prepared muffin tin, filling each cup about 3/4 of the way full.

Step 7

Place the tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes. Then transfer them to a wire rack to finish cooling completely.

Step 9

Serve warm or store in an airtight container at room temperature for up to 3 days. Enjoy!
