Ingredients

  • 4 pieces chicken breasts
  • 120 grams cream cheese
  • 80 grams spinach leaves
  • 2 cloves garlic cloves, minced
  • 1 small onion, finely chopped
  • 100 grams shredded mozzarella cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 12 pieces toothpicks

Directions

Step 1

Preheat your oven to 190°C (375°F) and grease a baking dish with olive oil.

Step 2

Butterfly each chicken breast by slicing it horizontally, stopping just before cutting all the way through. Open the chicken like a book and place a sheet of plastic wrap over it. Gently pound with a mallet to flatten it evenly to about 1 cm thickness.

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped onion, and sauté for 2-3 minutes until softened and fragrant.

Add the spinach leaves to the skillet and cook until wilted, about 2 minutes. Remove the skillet from heat and let the mixture cool slightly.
