Preheat your oven to 190°C (375°F) and grease a baking dish with olive oil.
Butterfly each chicken breast by slicing it horizontally, stopping just before cutting all the way through. Open the chicken like a book and place a sheet of plastic wrap over it. Gently pound with a mallet to flatten it evenly to about 1 cm thickness.
