  • 1 cup Granulated sugar
  • 8 ounces Cream cheese (room temperature)
  • 1 14-ounce can Sweetened condensed milk
  • 1 12-ounce can Evaporated milk
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Water (for caramelizing sugar)

Directions

Step 1

Preheat your oven to 350°F (175°C). Have a 9-inch round baking dish or flan mold ready, as well as a larger roasting pan for the water bath.

In a medium saucepan over medium heat, combine 1 cup of granulated sugar with 2 tablespoons of water. Stir just until the sugar begins to dissolve, then stop stirring and let the mixture boil. Swirl the pan occasionally until the sugar melts completely and turns a deep amber color.
