Ingredients

  • 500 grams All-purpose flour
  • 300 milliliters Warm water
  • 7 grams Instant yeast
  • 10 grams Salt
  • 30 milliliters Olive oil
  • 5 grams Sugar
  • 10 grams Sesame seeds
  • 5 grams Nigella seeds (optional)

Directions

Step 1

In a large mixing bowl, combine 500 grams of all-purpose flour with 7 grams of instant yeast, 10 grams of salt, and 5 grams of sugar.

Step 2

Make a well in the center of the dry ingredients and pour in 300 milliliters of warm water and 30 milliliters of olive oil.

Step 3

Mix the ingredients with a wooden spoon or your hands until a rough dough forms.

Step 4

Turn the dough onto a lightly floured surface and knead for about 10 minutes, until smooth and elastic.

Step 5

Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 6

Preheat your oven to 220°C (428°F) and place a baking stone or an inverted baking tray in the oven to heat up.

Step 7

Once the dough has risen, punch it down to release the air and divide it into two equal portions.

Step 8

Shape each portion into a ball, and then flatten each one to a disk about 1 centimeter thick and 20 centimeters in diameter.

Step 9

Place the disks onto a piece of parchment paper.

Step 10

Sprinkle the tops with sesame seeds and nigella seeds (if using), and gently press them into the dough with your fingers.

Step 11

Let the shaped dough rest for another 15 minutes to allow for a slight rise.

Step 12

Using the parchment paper, carefully transfer one dough disk onto the preheated baking stone or tray in the oven.

Step 13

Bake each fladenbrot for 10-12 minutes or until puffed and golden brown.

Step 14

Remove from the oven and let cool slightly on a wire rack before serving.

Step 15

Repeat the baking process with the second dough disk.
