Ingredients

  • 500 g Fresh tuna steak (sushi grade)
  • 1 tbsp Chinese five spice powder
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 2 tbsp Sesame seeds (white or mixed)
  • 1 tbsp Vegetable oil
  • 3 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Lime juice
  • 1 tbsp Mirin (sweet Japanese cooking wine)
  • 1 stalk Green onion, finely sliced
  • 1 tsp Grated fresh ginger
  • 1 clove Garlic, minced

Directions

Step 1

Pat the tuna steak dry with paper towels and set aside on a clean plate.

Step 2

In a small bowl, mix the Chinese five spice powder, salt, and black pepper. Rub the mixture evenly onto all sides of the tuna steak.

Step 3

Spread the sesame seeds out on a flat plate. Gently press the tuna steak into the sesame seeds, coating all sides evenly to form a crust.

Step 4

Heat a large skillet or frying pan over medium-high heat. Add vegetable oil and swirl to coat the pan.

Step 5

Carefully place the tuna steak into the hot pan. Sear each side for 30-45 seconds, ensuring the outside is cooked while the inside remains rare. Use tongs to help sear the edges if necessary.

Step 6

Remove the seared tuna from the pan and transfer it to a cutting board. Let rest for 2-3 minutes before slicing.

Step 7

While the tuna rests, prepare the ponzu dipping sauce. In a small bowl, whisk together soy sauce, rice vinegar, lime juice, mirin, green onion, grated ginger, and minced garlic.

Step 8

With a sharp knife, slice the tuna steak into thin, even slices.

Step 9

Arrange the sliced tuna on a serving plate and serve immediately with the ponzu dipping sauce on the side.
