Ingredients

  • 250 grams Whole wheat flour
  • 250 grams All-purpose flour
  • 50 grams Rolled oats
  • 50 grams Sunflower seeds
  • 25 grams Flaxseeds
  • 15 grams Chia seeds
  • 25 grams Pumpkin seeds
  • 1 teaspoon Salt
  • 1 teaspoon Baking soda
  • 1 tablespoon Honey
  • 500 milliliters Buttermilk

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, rolled oats, sunflower seeds, flaxseeds, chia seeds, pumpkin seeds, salt, and baking soda. Mix well to evenly distribute the dry ingredients.

Step 3

In a separate bowl, whisk together the buttermilk and honey until the honey is dissolved.

Step 4

Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Using a wooden spoon, stir until a rough dough forms. Avoid overmixing; the dough should be soft and slightly sticky.

Step 5

Turn the dough out onto a lightly floured surface and gently shape it into a round loaf. Do not knead the dough excessively.

Step 6

Transfer the loaf to the prepared baking sheet. Using a sharp knife, score a deep cross into the top of the loaf (this helps the bread cook evenly).

Step 7

Bake in the preheated oven for 35 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step 8

Remove from the oven and let the bread cool on a wire rack for at least 10 minutes before slicing.

Step 9

Serve warm with butter, jam, or your favorite soup.
