Ingredients

  • 4 pieces Skinless fish fillets (e.g., cod, halibut, or sea bass)
  • 4 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 cup Green or brown lentils
  • 3 cups Low-sodium chicken or vegetable broth
  • 2 cloves Garlic cloves, minced
  • 1 medium Onion, finely chopped
  • 1 medium Carrot, diced
  • 1 stalk Celery stalk, diced
  • 3 sprigs Fresh thyme sprigs
  • 2 tablespoons Lemon juice
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Fresh parsley, finely chopped (optional for garnish)

Directions

Step 1

Rinse the lentils thoroughly under cold water and set aside.

Step 2

In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrot, celery, and garlic. Sauté for 5-7 minutes or until the vegetables are soft and fragrant.

Step 3

Add the lentils, broth, and thyme sprigs to the saucepan. Stir to combine and bring to a gentle boil. Reduce the heat to low and simmer for 25-30 minutes, or until the lentils are tender and most of the liquid is absorbed. Remove the thyme sprigs.

Step 4

Transfer the cooked lentils and vegetables to a blender or use an immersion blender to puree until smooth. Add 1 tablespoon of butter and 1 tablespoon of lemon juice to the puree, blending until incorporated. Season with a pinch of salt and pepper to taste. Keep warm.

Step 5

Pat the fish fillets dry with paper towels. Season both sides with salt, pepper, and 1 tablespoon of lemon juice.

Step 6

Heat 2 tablespoons of olive oil in a large non-stick skillet over medium-high heat. Add the fish fillets and cook for 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove from the skillet and let rest for 2 minutes.

Step 7

To assemble, spoon a generous amount of lentil puree onto each plate. Place a fillet of fish on top of the puree. Drizzle with any remaining pan juices and a small knob of butter if desired.

Step 8

Garnish with fresh parsley, if using, and serve immediately. Enjoy your Fish on Lentil Puree!
