  • 4 pieces Hard bread (hardtack)
  • 4 tablespoons Unsalted butter
  • 150 grams Salted pork fat (scrunchions)

  • 2 liters Water

Step 1

1. Start by soaking the salted cod fish in cold water for 12-24 hours to remove excess salt, changing the water 2-3 times during this period.

2. Just before cooking, soak the hard bread (hardtack) in a large pot or bowl of cold water for about 12 hours or overnight to soften.

3. Once the fish is ready, drain the soaking water and place the fish in a large pot. Add fresh water (enough to fully cover the fish) and bring to a boil. Reduce the heat and simmer for 10-15 minutes until the fish is tender. Remove from the water, flake into bite-sized pieces, and set aside.
