Ingredients

  • 3 tablespoons Basmati rice
  • 1 liter Whole milk
  • 6 tablespoons Sugar
  • 4 pods Cardamom pods
  • 10 strands Saffron strands
  • 10 pieces Almonds
  • 10 pieces Pistachios
  • 1 teaspoon Rose water

Directions

Step 1

Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and spread on a clean towel to dry for a few minutes.

Step 2

Grind the dried rice into a coarse powder using a blender or spice grinder. Set aside.

Step 3

In a large, heavy-bottomed pot, bring the milk to a gentle boil over medium heat, stirring occasionally to prevent burning.

Step 4

Once the milk comes to a boil, lower the heat to medium-low and add the ground rice gradually, stirring continuously to avoid lumps.

Cook the mixture for 20–25 minutes, stirring constantly, until the rice is fully cooked and the milk thickens to a pudding-like consistency.

Crush the cardamom pods and add the seeds to the pot along with the sugar. Stir well to dissolve the sugar completely.

Soak the saffron strands in 2 tablespoons of warm milk and gently crush them to release their color. Add this saffron milk to the pot, stirring well.

Finely chop the almonds and pistachios and add most of them to the firni, saving some for garnishing.
