Ingredients

  • 6 pieces Roma tomatoes
  • 2 pieces Jalapeño peppers
  • 1 large White onion
  • 3 pieces Garlic cloves
  • 0.5 cups Cilantro
  • 1 piece Lime
  • 1 teaspoon Kosher salt
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Ground cumin
  • 2 tablespoons Water (optional, for adjusting consistency)

Directions

Step 1

Preheat your grill, broiler, or stovetop griddle to high heat.

Step 2

Wash the Roma tomatoes, jalapeño peppers, and onion. Leave the tomatoes and jalapeños whole, and cut the onion into thick wedges.

Step 3

Place the tomatoes, jalapeños, onion wedges, and garlic cloves (with skins on) on the grill or griddle. Brush lightly with olive oil to prevent sticking.

Step 4

Cook for 8-10 minutes, turning occasionally, until the vegetables are charred and softened. The tomatoes should have blackened skin, the jalapeños should be blistered, and the onions caramelized.

Step 5

Remove the ingredients from the heat and allow them to cool slightly. Once cool, peel the skins off the garlic and (optional) the jalapeños if you want less heat.

Step 6

Dice the roasted vegetables into chunks, roughly chop the cilantro, and juice the lime.

Step 7

In a blender or food processor, combine the roasted vegetables, cilantro, lime juice, kosher salt, and ground cumin. Pulse a few times until you achieve your desired salsa consistency. Add water if needed to adjust the thickness.

Step 8

Taste and adjust seasoning by adding more salt or lime juice if desired.

Step 9

Transfer the salsa to a serving bowl and let it cool completely. This salsa can be served immediately or chilled for an hour for the flavors to meld further.

Step 10

Serve with tortilla chips, tacos, or as a topping for grilled meats. Enjoy!
