Ingredients

  • 1.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.25 teaspoon salt
  • 1 cup evaporated milk
  • 0.5 cup water
  • 1 piece large egg
  • 4 tablespoons margarine or butter (melted)
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil (for cooking)
  • 4 tablespoons margarine (for serving)
  • 4 tablespoons granulated sugar (for serving)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, and salt. Whisk together to ensure even distribution.

Step 2

In a separate bowl, whisk together the evaporated milk, water, egg, melted margarine or butter, and vanilla extract until well combined.

Step 3

Slowly pour the wet ingredients into the dry ingredients, whisking gently to create a smooth, lump-free batter. Be careful not to overmix.

Step 4

Heat a non-stick frying pan or skillet over medium heat. Lightly grease the pan with a small amount of vegetable oil or margarine.

Step 5

Once the pan is hot, pour about 1/4 cup of batter into the pan to form a round pancake. Cook until bubbles appear on the surface and the edges start to set, about 2-3 minutes.

Step 6

Flip the pancake using a spatula and cook the other side for another 1-2 minutes, or until golden brown. Repeat with the rest of the batter, greasing the pan as necessary.

Step 7

Serve the pancakes warm with a pat of margarine on top and a generous sprinkle of granulated sugar. Optional: Add syrup or fruit if desired.
