Ingredients

  • 500 grams pork shoulder (cubed)
  • 250 grams pork liver (cubed)
  • 60 ml soy sauce
  • 30 ml calamansi or lemon juice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 240 ml tomato sauce
  • 480 ml water or chicken broth
  • 1 large potato (peeled and diced)
  • 1 medium carrot (peeled and diced)
  • 1 medium red bell pepper (diced)
  • 100 grams green peas
  • 2 pieces bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon sugar

Directions

Step 1

In a bowl, combine the pork shoulder, soy sauce, and calamansi or lemon juice. Mix well and marinate for 30 minutes.

Step 2

Heat the vegetable oil in a large pot over medium heat. Sauté the garlic and onions until fragrant and the onions are translucent.

Step 3

Add the marinated pork (reserve the marinade for later) to the pot. Cook until the pork starts to brown.

Step 4

Stir in the tomato sauce, water or chicken broth, and reserved marinade. Add the bay leaves. Bring to a boil, then lower the heat and let it simmer for 30 minutes or until the pork is tender.

Add the diced potatoes and carrots. Simmer for 10 minutes until they start to soften.

Stir in the diced pork liver and let it cook for 5 minutes.

Add the red bell pepper, green peas, salt, black pepper, and sugar. Simmer for another 5-7 minutes, allowing the flavors to meld and the vegetables to cook through.
