  • 400 grams chicken breast
  • 1 large carrot
  • 2 pieces celery stalks
  • 1 piece medium onion
  • 3 pieces garlic cloves
  • 1 can (about 370 ml) evaporated milk
  • 8 cups water
  • 3 cups chicken broth
  • 2 tablespoons oil
  • 2 tablespoons fish sauce
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 cup shredded cabbage

Directions

Step 1

Boil the chicken breast in 8 cups of water until fully cooked, about 15-20 minutes. Remove the chicken from the pot and let it cool before shredding into bite-sized pieces. Reserve the chicken stock.

Step 2

In a large pot, heat the oil over medium heat. Sauté the garlic and onion until fragrant and the onions are translucent.

Step 3

Add the shredded chicken to the pot and season with fish sauce. Stir to combine.

Step 4

Pour in the chicken broth and the reserved chicken stock. Bring the mixture to a boil.

Step 5

Add the elbow macaroni and cook until al dente, following package instructions, usually about 8-10 minutes.

Step 6

While the pasta is cooking, dice the carrot and celery. Add them to the soup and continue cooking until the vegetables are tender.

Step 7

Stir in the shredded cabbage and continue cooking for another 2 minutes.

Step 8

Pour in the evaporated milk and stir well. Simmer for an additional 3-5 minutes.

Step 9

Season the sopas with salt and pepper to taste. Adjust the seasoning as needed.

Step 10

Remove from heat and let it sit for a few minutes before serving.

Step 11

Serve hot in bowls, and enjoy the comforting taste of homemade sopas.
