Ingredients

  • 4 steaks (6-8 oz each) Filet mignon
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 6 tablespoons (softened) Unsalted butter
  • 2 tablespoons Dark rum
  • 1 clove (minced) Garlic
  • 1 tablespoon (chopped) Fresh parsley
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Vegetable oil

Directions

Step 1

Season each filet mignon steak generously with salt and freshly ground black pepper on all sides. Let them sit at room temperature for about 15 minutes while you prepare the rum butter.

Step 2

In a small bowl, combine the softened unsalted butter, dark rum, minced garlic, chopped parsley, and thyme leaves. Mix thoroughly until smooth and well combined. Spoon the butter onto a piece of parchment paper, roll it into a log shape, and refrigerate until firm.

Step 3

Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat. Add olive oil and vegetable oil to the pan.

Step 4

Once the oil is shimmering, carefully place the filet mignon steaks in the hot pan. Sear for about 3-4 minutes on one side to form a golden-brown crust.

Step 5

Flip the steaks and continue to cook for an additional 3-4 minutes for medium-rare or longer depending on your preferred doneness. Use a meat thermometer to check for an internal temperature of 130°F for medium-rare.

Step 6

Once cooked to your desired doneness, remove the steaks from the pan and let them rest on a plate covered loosely with foil for 5 minutes to retain their juices.

Step 7

Slice the chilled rum butter into rounds and place one slice on top of each steak while they are still warm. The butter will begin to melt, creating a rich and flavorful topping.

Step 8

Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes, and enjoy this luxurious dish!
