Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter (cold)
  • 1 cup sharp cheddar cheese (shredded)
  • 0.5 cup cooked bacon (crumbled)
  • 0.25 cup whey protein powder (unflavored)
  • 0.75 cup buttermilk
  • 2 tablespoons fresh parsley (chopped)
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.

Step 3

Cut the cold butter into small cubes and add them to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the shredded cheddar cheese, crumbled bacon, protein powder, and chopped parsley until evenly distributed.

Step 5

Make a well in the center of the mixture and pour in the buttermilk. Use a wooden spoon or spatula to gently combine the ingredients until the dough comes together. Do not overmix.

Step 6

Lightly flour a clean surface and turn the dough out onto it. Pat the dough into a roughly 1-inch thick rectangle.

Step 7

Use a 2.5-inch biscuit cutter or the rim of a glass to cut out biscuits. Re-roll the dough scraps as needed to use up all the dough.

Step 8

Place the biscuits onto the prepared baking sheet, leaving a little space between each one.

Step 9

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top.

Step 10

Remove from the oven and let the biscuits cool for 5 minutes on the baking sheet before serving warm.
