Ingredients

  • 500 grams Fresh figs
  • 250 grams Granulated sugar
  • 2 tablespoons Lemon juice
  • 60 milliliters Water
  • 1 teaspoon Vanilla extract (optional)

Directions

Step 1

Rinse the figs under cold water and pat them dry with a clean kitchen towel.

Step 2

Remove the stems from the figs and slice them into quarters. No need to peel the figs as their skin will soften during cooking.

Step 3

In a medium saucepan, combine the figs, sugar, lemon juice, and water.

Step 4

Place the saucepan over medium heat and stir gently until the sugar dissolves completely.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 30-40 minutes. Stir occasionally to prevent sticking, and use the back of a spoon to mash the figs as they soften.

Step 6

If you’re using vanilla extract, stir it in during the last 5 minutes of cooking for added flavor.

Step 7

Continue simmering until the mixture thickens to a jam-like consistency. The jam is ready when a small drop placed on a cold plate gels slightly and doesn’t run.

Step 8

Carefully pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars tightly with lids.

Step 9

Allow the jars to cool to room temperature, then store them in the refrigerator for up to 3 weeks. You can also process the jars in a water bath for long-term storage.
