Ingredients

  • 900 grams Fresh figs
  • 400 grams Granulated sugar
  • 1 tablespoon Orange zest
  • 120 milliliters Fresh orange juice
  • 2 tablespoons Lemon juice
  • 100 grams Chopped walnuts
  • 0.5 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground cloves
  • 120 milliliters Water

Directions

Step 1

Wash the figs thoroughly under cold water. Trim the stems and cut the figs into quarters.

Step 2

In a large, heavy-bottomed pot, combine the sugar, water, orange zest, orange juice, and lemon juice. Stir to dissolve the sugar.

Step 3

Add the figs to the pot and place it over medium heat. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking.

Step 4

Reduce the heat to low and simmer the mixture for 40-50 minutes, stirring occasionally until the figs begin to break down and the conserve thickens.

Step 5

Stir in the ground cinnamon, ground cloves, and chopped walnuts. Simmer for an additional 10 minutes to blend the flavors.

Step 6

To test for doneness, spoon a small amount of the conserve onto a cold plate and allow it to cool. It should hold its shape without spreading too much; if it's still runny, cook for a few more minutes.

Step 7

Once the desired consistency is achieved, remove the pot from the heat and let the conserve cool slightly.

Step 8

Transfer the fig conserve to sterilized jars, leaving a small amount of headspace at the top. Seal tightly and let it cool completely at room temperature.

Step 9

Store in the refrigerator for up to 3 weeks or process in a water bath for longer shelf life.
