Ingredients

  • 1 cup Dried figs
  • 1 cup Kalamata olives (pitted)
  • 2 tablespoons Capers (rinsed and drained)
  • 1 large Garlic clove
  • 1 teaspoon Fresh rosemary leaves
  • 1 teaspoon Fresh thyme leaves
  • 3 tablespoons Extra virgin olive oil
  • 1 tablespoon Lemon juice
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Water (optional, for consistency)

Directions

Step 1

Roughly chop the dried figs and place them in a small bowl. Cover with warm water and let them soak for 10 minutes to soften. Drain and set aside.

Step 2

Using a food processor, combine the softened figs, Kalamata olives, capers, garlic clove, rosemary, thyme, and black pepper.

Step 3

Pulse the mixture a few times to start blending the ingredients into a coarse paste.

Step 4

With the food processor running, slowly drizzle in the olive oil and lemon juice. Continue processing until the mixture reaches your desired consistency. You can add 1 tablespoon of water if the tapenade seems too thick.

Step 5

Taste and adjust seasoning if needed. Add a pinch more black pepper or an extra drizzle of lemon juice to suit your preference.

Step 6

Transfer the tapenade to a serving bowl or airtight container. Serve immediately with crackers, crostini, or sliced baguette, or refrigerate for up to 5 days.
