Ingredients

  • 2 pieces (about 8 oz each) Steak (ribeye, sirloin, or strip steak)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper (freshly ground)
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 cloves, minced Garlic
  • 2 sprigs Fresh rosemary or thyme

Directions

Step 1

Take the steaks out of the refrigerator and let them sit at room temperature for 15-20 minutes before cooking.

Step 2

Pat the steaks dry with a paper towel to remove excess moisture. Season both sides generously with salt and freshly ground black pepper.

Step 3

Preheat a large, heavy skillet (preferably cast iron) over medium-high heat for 2-3 minutes until it's very hot.

Step 4

Add 2 tablespoons of olive oil to the skillet and swirl to coat the surface.

Step 5

Carefully place the steaks in the skillet, laying them away from you to avoid splattering. Let them sear undisturbed for about 3-4 minutes, depending on desired doneness and steak thickness.

Step 6

Flip the steaks using tongs and cook for another 3-4 minutes on the other side for medium-rare. Adjust the cook time as needed for your preferred level of doneness.

Step 7

Add 2 tablespoons of butter, minced garlic, and sprigs of rosemary or thyme to the skillet. Tilt the skillet slightly and use a spoon to baste the steaks with the melted butter and aromatics for about 1-2 minutes.

Step 8

Remove the steaks from the skillet and transfer them to a cutting board. Let them rest for 5 minutes to retain their juices before slicing or serving.

Step 9

Serve the steaks whole or sliced, with the buttery skillet juices spooned on top for extra flavor. Enjoy!
