Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 minced garlic cloves
  • 2 tablespoons taco seasoning
  • 1 14.5-ounce can, drained canned diced tomatoes with green chilies
  • 1 15-ounce can, drained and rinsed canned black beans
  • 1 cup frozen corn
  • 4 cups, lightly crushed tortilla chips
  • 2 cups, divided shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • 3 thinly sliced green onions
  • 2 tablespoons, chopped fresh cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch casserole dish and set it aside.

Step 2

Heat a large skillet over medium heat. Add the ground beef and cook, breaking apart with a spoon, until browned and fully cooked, about 5-7 minutes. Drain off any excess grease.

Step 3

Add the diced onion and minced garlic to the skillet with the beef. Sauté for 3-4 minutes until the onion is soft and fragrant.

Step 4

Stir in the taco seasoning, canned diced tomatoes with green chilies, black beans, and corn. Cook for another 2-3 minutes, mixing everything thoroughly.

Step 5

In the prepared casserole dish, layer half of the lightly crushed tortilla chips evenly on the bottom. Spread half of the beef mixture over the chips. Sprinkle with 1 cup of cheddar cheese.

Step 6

Repeat the layers with the remaining tortilla chips, beef mixture, and 1 more cup of cheddar cheese. Finally, sprinkle the shredded Monterey Jack cheese evenly over the top.

Step 7

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbling.

Step 8

Remove the casserole from the oven and let it rest for about 5 minutes. Top with dollops of sour cream, sliced green onions, and fresh cilantro before serving.

Step 9

Garnish as desired and enjoy warm!
